This Cauliflower Egg Fry is a simple and tasty dish that goes especially well with chapati, roti, or even toasted bread.
I first tasted something similar at a friend’s place and wanted to try making my own version. I cooked the cauliflower and eggs separately and combined them at the end. You can also prepare everything in the same pan by cooking the eggs first and then adding the cauliflower.
I grated the cauliflower for this version, but you can also cut it into very small pieces if you prefer. The important thing is not to overcook the cauliflower, as it tastes best when it still has a little texture.

Ingredients
Main Ingredients
- Cauliflower – 1 medium
- Eggs – 2
For the Egg Fry
- Oil – 1 tsp
- Green chilies – 2, slit
- Onion – 1, chopped
- Salt – to taste
For the Cauliflower Fry
- Oil – 1 tsp
- Mustard seeds – 1 tsp (optional)
- Split urad dal – 1/4 tsp (optional)
- Curry leaves – 1 sprig (optional)
- Onion – 1, chopped
- Red chili powder – 1 tsp
- Turmeric powder – 1/2 tsp
- Salt – to taste
Preparation
- Clean the cauliflower and break it into medium-sized florets.
- Grate the cauliflower and keep it aside. You can also chop it into very small pieces instead of grating.
- Slit the green chilies.
- Chop the onions and divide them into two equal portions.
Prepare the Egg Fry
- Heat 1 teaspoon oil in a non-stick pan over medium heat.
- Add the slit green chilies and 1 chopped onion.
- Sauté until the onion becomes soft and translucent.
- Add the eggs and allow them to cook for about 1–2 minutes.
- Add salt to taste, then scramble the eggs with a spatula until completely cooked.
- Remove the scrambled eggs from the pan and keep them aside.
Prepare the Cauliflower Fry
- Heat the remaining 1 teaspoon oil in another non-stick pan.
- Add the mustard seeds, if using, and allow them to splutter.
- Add the split urad dal and curry leaves, if using.
- Add the remaining chopped onion and sauté until it becomes soft and translucent.
- Add the grated cauliflower, red chili powder, and turmeric powder. Mix well.
- Cook over medium heat, stirring occasionally, until the cauliflower is cooked and any moisture has completely evaporated.
- Add the prepared scrambled eggs and mix everything together.
- Taste and add additional salt if needed.
- Cook for another minute, then remove from the heat.
Tips
Do Not Overcook: Avoid frying the cauliflower for too long, as it can lose its texture and become too soft.
Grated or Chopped: You can grate the cauliflower as in this recipe or cut it into very small pieces.
One-Pan Version: Instead of cooking the eggs and cauliflower separately, scramble the eggs first, remove them temporarily or push them to the side, and then cook the cauliflower before combining everything.
Optional Tempering: Mustard seeds, urad dal, and curry leaves can be skipped for a simpler version.
Serving Suggestion
Serve Cauliflower Egg Fry hot with chapati, roti, toasted bread, or steamed white rice.
