Keerai Muttai Poriyal is one of my favorites, it takes no time to cook. All leafy vegetables are source of high nutrients with high health benefits. When I see them in store I buy them without having second thought. They play a major role in cardiovascular health.
Muttai Keerai Varuval / Spinach Egg Fry

Ingredients
- Spinach - 1 bunch ( baby spinach or any available leafy vegetable)
- Onion - 1 no
- Oil - 3 tsp
- Mustard - ½ tsp
- Split Black gram - ½ tsp
- Channa dhal - ½ tsp
- Cumin seeds - ½ tsp
- Asafoetida/Hing - 1 pinch
- Green Chili - 4 nos
- Curry Leaves - 1 strand
- Red chili powder - 1 tsp
- Coriander/dhania powder - 1 tsp
- Turmeric powder - ¼ tsp
- Cumin powder - ½ tsp
- Salt - to taste
- Egg - 3 nos
Instructions
PREP:
- Beat the egg and keep it ready.
- Chop the spinach and onion.
- Split open green chili.
COOKING:
- In a pan pour oil, mustard , cumin, green chili, curry leaves, hing and fry. Add chopped onion and fry till it turns golden brown.
- Add chopped spinach, cumin powder, red chili powder, turmeric, coriander powder and salt.
- Fry till the water is completely evaporated from spinach in medium flame.
- Add the beaten egg, add salt as required. Fry till egg is cooked well.
Notes
Serve with white rice, curd rice or chapthi.
