Well, here’s a quick egg masala. Egg is rich in protein and other vitamins and a daily dose is healthy. Here in the US, eggs taste a little different, probably because of what the hens are fed. For a similar taste to India try buying vegetarian fed hen eggs or organic.
Here’s an easy option when you are in no mood to cook and for those who love eggs I bet this is a special treat. Preparing masala takes just 10 min and the eggs can be boiled in parallel. Do not cook the eggs for more than 20 min. Overcooking will provide very little/no protein benefit from the eggs.

Egg | 4 nos |
Oil | 1 tbsp |
Curry Leaves | 1 strand |
Big Onion | 2 nos ( medium ) |
Tomato | 3 nos ( medium ) |
Garlic Pod | 6 no |
Chili Powder | 3/4 tsp |
Coriander Powder | 1/4 tsp |
Turmeric | 1/4 tsp |
Water | 1/4 cup |
Salt | to taste |
Coriander Leaves | 3 tbsp |

Step 1
Cook the egg, boiling in water for 10 -15 min and remove the shell. With the knife just make slits in the egg. Do not split open in to pieces, use as a whole egg. Chop Onion,tomato and garlic.

Step 2
In a pan heat Oil. When hot add curry leaves, garlic and onion. Fry till the onion is translucent. Add chopped tomatoes and fry till they are cooked. Add coriander powder, turmeric powder, red chili and salt. Fry for 2 min. Add water and allow it to boil.

Step 3
Add the egg and let the gravy become dry and well coated on egg say around 5-10 min in medium flame. Add the coriander leaves at the end.
(*) Can be accompanied with steamed white rice, chapathi and poori.

That is the most delicious egg masala I have seen, pity my eyes don’t have taste-buds! It is morning just after breakfast and I am already salivating, cant wait for lunch time to make this!
Isn’t boiling an egg for 20 minutes too much? Do you need very hard boiled egg for this? Maybe you time it from cold and not from the start of boiling? I guess how well eggs are done is a very personal preference, judged by the number of times people ask “How do you like your eggs?” in western movie/TV programmes.

Usually I take it from fridge, so i keep it for 20 min from the start to end time in medium flame, but usually it’s 10-15 min if in room temperature in medium flame. Ultimately, it shouldn’t form the green/ grey ring around the yolk, if so it’s over cooked. Also yes it depends how well ur eggs should be cooked. Hope you have enjoyed preparing this !!!
