Chettinad dishes are known for their bold spices and wonderful aroma. In this Egg Curry, I especially like cooking the eggs directly in the gravy instead of boiling them separately and adding them at the end.
Breaking the eggs gently into the simmering curry allows them to cook as soft, whole pieces while absorbing the flavors of the coconut, fennel, cumin, pepper, and other spices.

Ingredients
Main Ingredient
- Eggs – 3
Paste 1
- Onion – 1/4 medium
- Ginger – 1-inch piece
- Garlic – 5 cloves
- Green chilies – 2
Paste 2
- Coconut – 3 tbsp
- Fennel seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Poppy seeds / Kas Kas – 1/4 tsp
- Cashews – 5
For the Curry
- Oil – 1 tsp
- Mustard seeds – 1/2 tsp
- Curry leaves – 1 sprig
- Onion – 1 medium, chopped
- Tomato – 1, chopped
- Red chili powder – 1/2 tsp
- Coriander powder – 1/2 tsp
- Black pepper powder – 1/4 tsp
- Garam masala – 1/4 tsp
- Annapurna Kurma Masala – 1 tsp (optional)
- Water – 1 cup
- Salt – to taste
- Coriander leaves – from about 2 stalks, chopped
Preparation
- Chop the onion, tomato, and coriander leaves.
- Grind the onion, ginger, garlic, and green chilies listed under Paste 1 into a coarse paste.
- Grind the coconut, fennel seeds, cumin seeds, poppy seeds, and cashews listed under Paste 2 into a smooth paste.
- Keep the eggs ready to crack directly into the simmering curry.
Cooking Instructions
- Heat the oil in a pan over medium heat.
- Add the mustard seeds and allow them to splutter.
- Add the curry leaves and chopped onion.
- Sauté for about 1 minute, until the onion begins to soften.
- Add Paste 1 and fry over medium heat for about 4–5 minutes, or until the raw aroma of the ginger, garlic, and onion disappears.
- Add the chopped tomato and cook for about 2 minutes, until it begins to soften.
- Add the red chili powder, coriander powder, black pepper powder, garam masala, and optional kurma masala.
- Fry for about 30 seconds over low to medium heat, stirring so the spices do not burn.
- Add Paste 2, 1 cup water, and salt.
- Mix well and bring the curry to a gentle boil.
- Carefully crack the first egg directly into the simmering gravy. Avoid stirring around the egg while it sets.
- Allow it to cook for about 5 minutes.
- Crack the second egg into another part of the pan and allow it to cook for about 5 minutes.
- Repeat with the third egg.
- Once all three eggs are set and completely cooked, gently spoon some gravy over them without breaking them apart.
- Add the chopped coriander leaves and remove from the heat.
Tips
Add the Eggs One at a Time: Giving each egg a few minutes to set before adding the next helps them remain as distinct pieces instead of mixing into the gravy.
Do Not Stir Immediately: Once an egg is cracked into the curry, leave it undisturbed until the white begins to set.
Boiled Egg Variation: If you prefer, hard-boiled eggs can be added to the finished gravy instead of cooking raw eggs directly in it.
Ground Coconut Masala: Grinding the coconut, fennel, cumin, poppy seeds, and cashews into a smooth paste gives the curry its rich body and flavor.
Gravy Consistency: If the curry becomes too thick while the eggs are cooking, add a small amount of hot water as needed.
Serving Suggestion
Serve Chettinad Muttai Kuzhambu hot with steamed white rice, chapati, dosa, idli, or parotta.
