Quinoa is a very nutritious grain with high protein. It has high dietary fiber, magnesium and iron. It is a nice substitute for rice. I love the crunchy taste when cooked.
I got this recipe from one of my work colleagues from whom I had tasted it for the first time. Since then I have fallen in love with quinoa. You can accompany this with any spicy gravy. This recipe is a very simple one, you can make variations by adding spinach, other legumes, cooked vegetables, some nuts etc ..

Ingredients
- Quinoa - 1 cup
- Spring Onion - 2 strand
- Grape tomatoes - ¼ cup
- Cucumber - ¼ no
- Half ripe Mango - ¼ no
- Chopped Cilantro - ¼ cup
- Lemon juice - to taste
- Extra virgin olive oil - 2 tsp
- Salt - to taste
Instructions
- Wash Quinoa in running water until it's clear to clean out the remaining residue. Pressure cook it with 2 cups of water for 1 whistle or follow the instruction given in the pack. Let this cool down in room temperature.
- Chop Spring Onion, Grape tomatoes, Cucumber, Half ripe Mango into very small pieces.
- Mix everything well together. Serve chilled or at room temperature.
Notes
This can be cooked and kept in refrigerator for couple of days.
Variations can be done by adding other regular salad ingredients.

There is no Indian name for Quinoa. It is south American staple food. It is available in India.

Hai . Can you please post the photo of quino before cooking. Quinoa which I brought is with brown skin.is there any method to remove the skin.because when it is cooked with the skin the taste is not good.it is like tasting rice with its brown skin. Is it that way we have to take quinoa?. Please help on this ?

It is called Thinai in Tamil (Fox Tail Millet), and yes, it is very much available in India.

I saw a pack of foxtail millet Which said its equivalent to quinoa in Nutritive value. So i dont think they are the same.
