Quinoa Salad

  • Quinoa - 1 cup
  • Spring Onion - 2 strand
  • Grape tomatoes - ¼ cup
  • Cucumber - ¼ no
  • Half ripe Mango - ¼ no
  • Chopped Cilantro - ¼ cup
  • Lemon juice - to taste
  • Extra virgin olive oil - 2 tsp
  • Salt - to taste
  1. Wash Quinoa in running water until it's clear to clean out the remaining residue. Pressure cook it with 2 cups of water for 1 whistle or follow the instruction given in the pack. Let this cool down in room temperature.
  2. Chop Spring Onion, Grape tomatoes, Cucumber, Half ripe Mango into very small pieces.
  3. Mix everything well together. Serve chilled or at room temperature.
This can be cooked and kept in refrigerator for couple of days. Variations can be done by adding other regular salad ingredients.
