Vatha Kulambu is a very famous brahmin side dish. This is a chettinadu special vatha kulambu. This is normally prepared with vathal ( sun dried vegetables ). Applam can be replaced with dry broad beans / dry ladies finger etc. Thick tamarind sauce with sun dried vegetables cooked in sesame oil tastes heavenly with steamed white rice.

Ingredients
- Sesame Oil - 3 tbsp
- Mustard - ½ tsp
- Fenugreek - ½ tsp
- Urad Dhal - 1 tsp
- Toor Dhal - 1 tbsp
- Curry Leaves - 2 strands
- Red Chili - 4 nos
- Appalam / Pappad - 3 nos
- Tamarind - Lemon size
- Turmeric - ¼ tsp
- Red Chili Powder - 3 tsp
- Asafoetida - ½ tsp
- Salt - required
Instructions
PREP:
- Soak tamarind in warm water for 30 min and take 2 cups of tamarind juice. Break Appalam in to medium pieces
COOKING:
- In a non stick pan heat oil. When hot add add urad dhal, toor dhal, Mustard. When the mustard crackles add red chili, fenugreek, Curry Leaves and fry for 15 seconds. Add the appalam and fry for a minute.
- Add tamarind juice, turmeric, red chili powder, asefoetida and salt. Allow it to boil till the raw smell from tamarind leaves and oil separates.
TIPS:
- Any sun dried vegetables of our choice can be used.
(*) Goes good with Rice and Curd Rice.

It is available in all Indian store.You buy that break and fry it with oil,like potato fry. Appalam is made-up with some kind of dal(sort of grain)

Sashi, I tried it. I have added macaroni and vadam also. As u said vadam is mixed up with the curry. But the taste was very nice.

I never tried with those Priya. May be they might get mashed up coz of soaking in tamarind juice while cooking.
