Plain Dal Fry/ Uppu Paruppu

We call this simple dal preparation Uppu Paruppu. It is an easy and comforting dish that pairs beautifully with plain white rice or chapati.

When I was a kid, I used to avoid this simple dal, but these days it has become one of my favorite comfort foods and a real lifesaver when I want something quick and satisfying. Add a little ghee while serving, and it tastes heavenly.

Ingredients

To Pressure Cook

  • Toor dal – 3/4 cup
  • Oil – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Tomato – 1 medium
  • Garlic – 2 cloves
  • Water – 1 1/2 cups, plus more as needed

For Tempering

  • Oil – 1 tsp
  • Cumin seeds – 1/4 tsp
  • Curry leaves – 1 sprig
  • Green chilies – 2, slit
  • Dried red chilies – 2
  • Red onion – 1/2 medium, chopped
  • Salt – to taste

Preparation

  1. Wash the toor dal thoroughly.
  2. Chop the tomato and garlic.
  3. Chop the red onion and slit the green chilies.

Cooking Instructions

  1. Add the washed toor dal, 1 teaspoon oil, turmeric powder, chopped tomato, garlic, and 1 1/2 cups water to a pressure cooker.
  2. Pressure cook for 3–4 whistles, or until the dal is completely soft.
  3. While the dal is cooking, heat 1 teaspoon oil in a small pan.
  4. Add the cumin seeds and allow them to splutter.
  5. Add the curry leaves, slit green chilies, dried red chilies, and chopped red onion.
  6. Sauté until the onion becomes soft and translucent.
  7. Once the pressure has released naturally, open the cooker and mash the cooked dal well.
  8. Add the prepared tempering and salt to the mashed dal. Mix well.
  9. If you prefer a thinner consistency, add a little more water and mix until the dal reaches your desired consistency.

Tips

Consistency: Uppu Paruppu can be served thick or slightly diluted. Add extra water only if you prefer a thinner dal.

Pressure Cooking: Cook the dal until very soft so it can be mashed easily and gives the dish a smooth, comforting texture.

For Extra Flavor: Add a spoonful of ghee while serving, especially when enjoying it with hot rice.

Serving Suggestion

Serve hot with plain white rice and a little ghee, or enjoy it as a simple side dish with chapati.

    Uppu Paruppu looks yum.. Yes, U r right – it is a life saver..:)

    Hope U don’t mind me budging in but to answer PS’s question..
    Add all the contents and enough water into the pressure cooker and close the lid securely. Then place the cooker on the fire and let the steam come through the opening on top of the lid [meant for the weight]. Only after U see steam coming through the opening,place the weight on the opening. Let the flame be on medium high. After 10 minutes U will hear a whistle. Do not remove from flame. The whistle will go off by itself. U will hear the pressure build up again and then another whistle.[If the recipe demands 3 or 4 whistles-follow the same steps until u hear 3 or 4 whistles]
    Only then remove from flame.Don’t open the lid immediately. Let the pressure ease off for 30 minutes and open the lid.

    Hello! I love your website. My parents are from Tamil Nadu (though from the western part of the state), and your recipes are the few I have found that are just like mom makes! One question, sometimes in your recipes you talk about using the pressure cooker for “2 whistles.” What does that mean? You put the lid on, wait for the whistle, and then do what? Release the pressure and go again? Add more liquid?

    I have not been using the pressure cooker for very long, so I don’t know all the ins and outs, yet. Thanks!

      Wait for the whistle and take out from the stove. The pressure will be release on its own with in 30 min. Before placing everything in pressure cooker make sure to add water. Hope this helps.

        I understand how the pressure cooker works, but I guess I don’t know what you mean by “3 or 4 whistles.” Usually, when the cooker whistles once, I remove it from heat, and wait ~30 min or so. What do you do if you are cooking for more than 1 whistle? Do you leave it on the heat, and will it stop whistling for a time?
