I like ladies finger fry with Curd rice. This recipe is quick and easy to make. The sliminess will not be felt with this method of preparation.
Ladies Finger Fry / Vendakkai Fry
- Ladies Finger/ Okra – 1 lb
- Oil – 3 tbsp
- Red Chili Powder – 1 tsp
- Sambar Powder – 1 tsp
- Salt – to taste
- Chop the ladies finger in to very small pieces and allow it to stay open for 1 hr.
- In a pan heat oil. When hot add chopped ladies finger and salt. Fry for 10 min. Add Red Chili Powder, Sambar Powder and fry till it becomes crispy.
- Ladies finger can be fried in a seperate pan with 1tsp of Oil to remove the stickyness and can follow the above procedure.
