Muttai Thokku / Egg Thokku

Egg is rich in protein. Doctor suggests to eat a egg per day. If any one is dieting, a boiled egg an be taken for breakfast. since egg is rich in protein it takes lot of time to digest and makes us not to starve till lunch. A simple egg thokku prepared in tomato.

Ingredients
  • Egg – 4 nos
  • Fennel Seeds – 1/2 tsp
  • Big Onion – 1 ( Medium )
  • Garlic – 6 nos
  • Tomato – 3 nos
  • Curry Leaves – 1 Strand
  • Turmeric – 1/4 tsp
  • Red Chili Powder – 3/4 tsp
  • Coriander Powder – 1/2 tsp
  • Salt – to taste
  • Coriander Leaves – 2 stks
Instructions
PREP:
  1. Boil egg in hot water for 15 min medium Flame. Allow it to cool down. Remove the shells, slit the egg into two pieces.
  2. chop onion, tomato and garlic.
COOKING:
  1. In a pan add oil, fennel seed, add curry leaves and fry for 10 sec. Add the chopped onion and fry till translucent. Add garlic and fry for 1 min. Add chopped tomatoes and fry till mushy. Add red chili powder, coriander powder, turmeric, salt. Fry for a min. Add egg at the end and leave for 3 min. Add coriander leaves and switch off.
TIPS:
  1. Add ground coconut for variations.
Notes
Serve as a side with white rice, chapathi.

    I don’t know to cook which is a shame. But I love eating. I am studying in Melbourne and miss my mom’s food a lot. I have been here for one and a half years and still didn’t feel like looking.
