Biriyani is one of the famous foods in India. The way of making differs all over India with slight taste variations. Taste of the biriyani lies in the ingredients added and mainly depends on the order in which they are added. This is a very simple recipe used mostly in the southern state of Tamil Nadu.
The same procedure can be used to make Veg, Mushroom Biriyanis taking out the Chicken and related marination stuffs. Taste and Flavor of the biryani comes well when you trial it for more number of times. I added Orange Food Color- 1/4 tsp to get this color.

Cabbage Pulao / Muttaikose Pulav
Pulaos are famous north indian rice dishes. Muttaicose is one of our fav Vegetables. At any time they will be available at my fridge. I got this recipe from my Mother-in law,tried for a small party and it was a super hit. A mild rice with any gravy of veg or non-veg would be a best combination for this. My rice was mashed up a little bit coz of excess water added while cooking.
Potato Peas Masala / Urulaikilangu Pattani Masala
I like potatoes cooked in any form. This is one of my favorite recipe for sambar and curd rice. Any green peas ( sweet, frozen or hard ) can be used for this or even they can be skipped. Still it tastes good.
Mushroom Gravy / Kalan Kulambu
Mushrooms are an excellent source of potassium, a mineral that helps lower elevated blood pressure and reduces the risk of stroke.One medium portabella mushroom has even more potassium than a banana or a glass of orange juice. One serving of mushrooms also provides about 20 to 40 percent of the daily value of copper, a mineral that has Cardio protective properties.
The latest findings show that white button mushrooms can reduce the risk of breast cancer and prostate cancer.
Mochakottai Kuzhambu / Val beans Gravy
Beans are very high in protein and fiber but low in fat. They have been proven to be a major player in the fight against cancer. Beyond that, they are beneficial to those with diabetes, and help lower cholesterol. Val bean are rarely cooked at my house, this is a chetinadu style val bean gravy.
Aval upma / Avalakki bath
Aval is a flattened rice which when soaked in water absorbs and bulges like rice. Aval / Poha is a famous breakfast item. They are soft and can be eaten uncooked with mixing sugar and coconut.
Dry Gongura Chicken Fry / Dry Pulicha Keerai Chicken Fry
Sorrel leaves has high levels of vitamins A and C. It’s used in the treatment of Jaundice and also helps for the problems like Indigestion and Cold. We used to grow sorrel leaves at our back yards and pluck them freshly for preparing chutnies. At many of my relative places, they grow up these plants during the season.
Sorrel leaves are famous in Andhra too named as gongura. Any Andhra restaurant will have gongura pachadi as a must for lunch meal.
