This is some what similar to the way we prepare chicken kuzhambu at kongunadu houses. We don’t add star anise, black stone flower. I added those to get the extra aroma which suites well for idili and dosa. Preparing this with the whole chicken gives an extra ordinary taste. Chicken thighs or breasts can also be substituted but will get the taste little closer to the original.

Buttermilk Gravy / Mor Kulambu
A simple flavorful Kulambu to be accompanied with white rice. Potato roast or vadam is the best combo according to me.
Tried making chetinnadu method vendaikkai moor kulambu and it turned out very good. I think this is derived from Revathi Shanmugam recipes, don’t remember exactly. My mom makes it without coriander leaves and green chili but it does add unique flavor and I enjoy it with this.
Chicken Biryani Tamilnadu Style
Biriyani is one of the famous foods in India. The way of making differs all over India with slight taste variations. Taste of the biriyani lies in the ingredients added and mainly depends on the order in which they are added. This is a very simple recipe used mostly in the southern state of Tamil Nadu.
The same procedure can be used to make Veg, Mushroom Biriyanis taking out the Chicken and related marination stuffs. Taste and Flavor of the biryani comes well when you trial it for more number of times. I added Orange Food Color- 1/4 tsp to get this color.
Ennai Kathirikkai Kuzhambu / Oil Brinjal Gravy
Ennai Kathirkkai is one of our fav. Brinjal is cooked well in tamarind juice. It tastes awesome with steamed white rice.
Potato Peas Masala / Urulaikilangu Pattani Masala
I like potatoes cooked in any form. This is one of my favorite recipe for sambar and curd rice. Any green peas ( sweet, frozen or hard ) can be used for this or even they can be skipped. Still it tastes good.
Mochakottai Kuzhambu / Val beans Gravy
Beans are very high in protein and fiber but low in fat. They have been proven to be a major player in the fight against cancer. Beyond that, they are beneficial to those with diabetes, and help lower cholesterol. Val bean are rarely cooked at my house, this is a chetinadu style val bean gravy.
