Ingredients
  • Basmati Rice - 2 cups
  • Cabbage - 2 cups
  • Oil - 5 tsp
  • Onion - 1 no
  • Cinnamon - 2 no
  • Cloves - 1 no
  • Garlic - 4 nos
  • Green Chili - 5nos
  • Turmeric - ¼ tsp
  • Garam masala - ¼ tsp
  • Salt - to taste
  • Coconut Milk - 1 cup
  • Water - 2¼ cups
  • Ghee - 2 tsp
  • Lemon - ½ no
Instructions
PREP:
  1. Soak basmati rice for 10 min. If it's soaked more than 10 minutes reduce water added for cooking else rice wouldn't be separated.
  2. Extract 1 cup of coconut milk from ½ cup of coconut.
  3. Slice cabbage into very thin length wise piece.
  4. Chop Green Chili in to very fine pieces.
  5. Chop onion length wise.
  6. Chop garlic to fine pieces.
COOKING:
  1. In a pressure cooker add oil, cinnamon, garlic, cloves, rice, grama masala, salt - little, turmeric one by one. Fry this till moisture from rice is evaporated. Add the coconut milk, water 2¼ cups and pressure cook. After rice is cooked, add ghee and stir with big fork to get nice separated grains.
  2. In an another pan, heat ghee. When hot add onion,green chili, salt and fry till onion is translucent. Add cabbage (Keep half hand full uncooked separately to add it at the end) and fry till it is half cooked. Add this to the cooked rice, squeeze the lemon and stir gently to mix well.
  3. Sprinkle the uncooked cabbage on top of the mixed rice and close the lid. This gives nice crunchy taste.
