| Spinach | 1 bunch ( baby spinach or which ever you like) |
| Onion | 1 no |
| Oil | 3 tsp |
| Mustard | 1/2 tsp |
| Split Black gram | 1/2 tsp |
| Channa dhal | 1/2 tsp |
| Cumin seeds | 1/2 tsp |
| Asafoetida/Hing | 1 pinch |
| Green Chili | 4 nos |
| Curry Leaves | 1 strand |
| Red chili powder | 1 tsp |
| Coriander/dhania powder | 1 tsp |
| Turmeric powder | 1/4 tsp |
| Cumin powder | 1/2 tsp |
| Salt | to taste |
| Egg | 3 nos |
Directions:

Step 1
Beat the egg and keep it ready. Chop the spinach and onion. Split open green chili.

In a pan pour oil, mustard , cumin, Green chili, Curry leaves, Hing and fry. Add chopped onion and fry till it turns golden brown. Add chopped Spinach, Cumin Powder, Red Chili Powder, Turmeric, Coriander Powder and Salt.

Step 3
Fry till the water is completely evaporated from spinach in medium flame. Add the beaten egg, if required add little more salt. Fry till egg is cooked well.
(*) This goes good with White rice, Curd Rice and Chapthi.
