I like ladies finger fry with Curd rice. This recipe is quick and easy to make. The sliminess will not be felt with this method of preparation.

Ingredients
  • Ladies Finger/ Okra - 1 lb
  • Oil - 3 tbsp
  • Red Chili Powder - 1 tsp
  • Sambar Powder - 1 tsp
  • Salt - to taste
Instructions
PREP:
  1. Chop the ladies finger in to very small pieces and allow it to stay open for 1 hr.
COOKING:
  1. In a pan heat oil. When hot add chopped ladies finger and salt. Fry for 10 min. Add Red Chili Powder, Sambar Powder and fry till it becomes crispy.
TIPS:
  1. Ladies finger can be fried in a seperate pan with 1tsp of Oil to remove the stickyness and can follow the above procedure.
