Kadai Bhendi / Kadai Ladies Finger
Ladies finger cooked in the aroma of coriander seeds. I loved this recipe from Vahrehvah. I prepared this in N’s b’day party for a small crowd and it was a super hit. N likes anything prepared in Ladies Finger. He liked this and often bugs me to prepare this.

Ingredients :
Bhendi/ Ladies Finger 15 nos
Oil 2 tsp
Coriander Seeds 2 tsp
Cumin seeds 1 tsp
Big Onion 1 cup
Turmeric 1/4 tsp
Ginger Garlic paste 1 tbsp
Curry Leaves 1 strand
Green Chillies 4
Tomato 2 ( Medium )
Coriander Powder 2 tsp
Cumin Powder 2 tsp
Red Chili Powder 1 tsp
Capsicum/ Bell Pepper (Desired colors) 1 cup
Garam Masala Powder 1/4 tsp
Salt to taste
Coriander Leaves 4 tbsp
Directions:
  1. Step 1

    Cut Ladies Finger into small pieces and fry them in the little oil till it is half cooked and the stickiness is gone. Grid Coriander Seed in blender into coarse.
    Chop Onion, capsicum, coriander leaves.

  2. Step 2

    In a pan add Oil, Cumin Seeds and Ground Coriander Seeds and fry for 3 or 4 seconds. Add Chopped Onion ,little salt and fry till it is translucent. Add turmeric. ginger garlic paste. Fry till the raw smell from ginger garlic paste leaves. Add Curry leaves, green chili and chopped Tomatoes.

  3. Step 3

    Add Coriander powder, Cumin powder and Red chili powder and fry for 3 min till the tomato is cooked. Add Chopped Bell Pepper, Coriander Leaves and mix it. Add fried okra and cook for about 5 min in a slow flame till the Ladies Finger is cooked well. Finally add the Garam masala & mix well.

Tips :
  • Use a Iron wok for better taste.

(*)  This is a good combo for Chapathi. Recipe from Vahrehvah.
