What is a muffin for newbies, the rest can skip the first para.<br />
Muffins are served as breakfast. There are two types of muffins English and American. English muffins are made with yeast where as American are made with chemical leavener like baking soda. American muffins are domed shaped and English muffins are flat.<br />
American Muffins are further divided into bread like (less sugar) muffins or cake like (high sugar)muffins. Variations can be made to the basic muffin recipe and baked into special muffins.<br />
The difference between a cupcake and a muffin is a cupcake has more sugar and a frosting layer on top, where as muffins don&#8217;t.</p>

<p>I started liking muffins after coming to America. They serve a lot of varieties for breakfast. I love muffins for it&#8217;s soft cake like inside texture and the crispy dome. So here&#8217;s my attempt at a Strawberry Muffin with fresh strawberries.<br />
I thought the strawberry would be cooked nicely and that won&#8217;t be moist inside the muffins, but I was wrong. When it&#8217;s cooked I could see the moistened area around every strawberry chunk, not sure if this is how it would be or I am doing it wrong, someone please answer me, if we use fresh fruits for baking is there any special steps that needs to be done?<br />

<p>Mix all purpose flour, baking powder and salt together. Cut the strawberries into bite size piece, toss them in a sieve with 1 1/2 tsp of all purpose flour to lightly coat them.</li>
<li>

<p>Mix the butter and sugar together and beat it with electric hand held mixer until they become fluffy, about 3 minutes. Add the eggs and beat until combined. Mix the vanilla syrup.</li>

<p>Add the flour now and beat them until they are mixed. Add milk and beat till all are mixed well. Don&#8217;t over beat as muffin would become rough. Using the rubber spatula fold (mix gently) the strawberries in the mix and keep it ready.</li>

<div class="steps">Step <span>4</span></div>
<p>Preheat the oven to 375 F. Prepare the muffin pan by spraying some oil or coat with a layer of butter. We can also use cupcake wraps and coat them with oil or butter. Divide the batter among the cups evenly using an ice-cream scoop or two spoons.</li>

<p>Cook it for about 20-25 min if it&#8217;s a mini muffin tray or 25-30 min if it&#8217;s a regular muffin tray. Rotate the muffin tray in the middle for even cooking. Before removing the tray from the oven check to make sure its cooked by inserting a tooth pick and check if it comes out clean.</li>

<p>Transfer it to the wired rack to cool them. Tilt the muffins on their side to cool them for at least 10 mins. Can be served warm.</li>
</ol>

<div class="tipsheading">Tips :</div>
<ul class="tips">
<li> Beat until the dry ingredients and wet ingredients combine to get the soft muffin else muffin would become rough.</li>
</ul>
<p>(*) This can be refrigerated in a airtight container for about a week. If refrigerated, heat for 10-15 sec in microwave before serving.</p>

A perfect tea time scone with Blueberries. It has a crunchy outer layer with fluffy texture inside.<br />
When I tried it for the first time it was super duper flop. I guess, I added more butter and little extra baking soda. The kneaded dough was super sticky with  more quantity. When I baked it, he he he it lost it&#8217;s shape and was spread across the whole baking tray. I was very disappointed.I just threw them away. So this time I tried with less quantity. Surprise !!! it turned out really good. I used fresh blueberry for the first time, but now I used dry blueberry, somehow i liked dry ones better than the fresh ones.  May be I should try some more times to get it exactly.<br />

<p>Cut butter into small pieces. Keep them and blueberries in freezer for more than 30 min. In a large bowl mix all the dry ingredients together. Stir the cream and egg together.</p>

<p>Mix the dry ingredients and liquid together by adding them slowly and knead them into a soft dough. Add blueberries too while kneading. This would be little wet.</p>

<p>Spread dry flour in the flat surface and knead the flour until they comes together.</p>
<li>

<p>Separate the dough into halves and pat one portion into a square. Cut them into half by making a triangle using the pastry cutter.</p>

<div class="steps">Step <span>5</span></div>
<p>Preheat the oven to 375 and bake it for 20-25 until it becomes golden brown.</p>
<li>

<p>Allow it to cool down for 20 min.</p>

<ul class="tips">
<li> Use cold butter to get fluffy texture.</li>
<li> Freeze blueberries to avoid mashing it while mixing.</li>
<li> Vennila essence can be added for extra flavor.</li>
<li>To make it more soft, add some more baking salt and knead the dough little more sticky.</li>
</ul>

This is also known as chickpea flour bonds from kongunadu / south india. This is a best evening snack. My mom used to make this when raining. We used to make this for small functions at our places or for any local festivals. If you are so health conscious squeeze the excess oil by keeping the fritter in the middle of the tissue and press it in the palm. Instead of green chili, red chili powder can also be used.<br />

<p>Finely Chop Onion, Green chili, Coriander and Curry Leaves. Mix chopped items with gram flour well using hands. Add Baking soda, Salt &amp; water and make it to a thick paste. Heat the oil in a frying pan in <strong>Medium </strong>heat. Take a spoon spatula and pour small amount of the paste into the Oil.</li>

<p>Pour as many as can fit into the pan, don&#8217;t over crowd it &amp; wait for 3 min. Once it starts floating in the oil, stir it. Stir often to fry evenly. When it becomes golden brown on all sides, take it out of oil and drain the oil. Normally it takes about 10-15 min for a single round.</li>

<ul class="tips">
<li>Dont make it very thick paste as the bonda might become very hard.</li>
<li>Also don&#8217;t make the paste too watery as it would absorb more Oil.</li>
<li>Variations can be made with adding chopped Mint Leaves or Grated Ginger or Grated Garlic.</li>

This snack is apt for evening crunching. It&#8217;s very easy to prepare and tastes good. These kind of puffs we get all over Tamilnadu with bit of stuffed masala added with Vegetables. The same method can be followed to prepare vegetable samosa or Veg Samosa with the vegetable fillings.<br />

<p>Thaw the puff pastry Sheet for 40 min in room Temperature or microwave for 30 Sec. <strong>Note:</strong> Dont Microwave for more than 30 sec, as it would be mashed up. Pastry sheet will have 3 columns, so cut into 9 pieces by splitting the column first and then rows. You would finally get 9 squares. Chop Onions in to little bigger than the regular ones.</li>

<p>In a pan, add oil, Mustard, Urad dhal and wait till mustard splutters. Add cumin, Chopped green chili, Onion, Salt and fry till the onion is cooked and the moisture in Onion is left. Add chili powder, Curry Masala Powder and fry for 2 or 3 minutes till the raw smell leaves. Do not forget to stir often as it would get burnt.</li>

<p>Allow the cooked onion to cool down for 15 min. Take the Pastry sheet, and keep a spoon full of onion, do not over fill as u cannot close the edges. Close the edges of the pastry sheet carefully. Do it slowly as it my break the sheet. Close by pressing the edges together in hands.</li>

<div class="steps">Step <span>4</span></div>
<p>In a Oven tray spread the Aluminum foil and spray some oil on top of the sheet. Spraying Oil is to avoid puff being stick to the sheet. Arrange the stuffed Puff in the oven tray. Preheat Conventional Oven to 400 F. Keep the tray inside for about 20 &#8211; 30 minutes. Turn the sides in the middle.</li>

I should say this as a best Tandoori Chicken south Indian recipe. I have been trying out lot of recipes for Tandoori Chicken, this turned out to be the best I have ever tasted. The initial marination and the second step marinations makes it very juicy and tasty to the core. Cooking it in the broiler pan in oven gave the best result.<br />

<p>Make several deep slits in Chicken leg pieces till the bone is visible. Mix Red Chili Powder &#8211; 2tbsp, Salt, Lemon juice to a thick paste. Apply it on the Slits as much as u can reach the bones. Coat well in every slits, this makes the masala to reach every part of it gives a good flavor. Marinate this for 30 mins.</p>

<p>In a wide open vessel, take Yogurt, Ginger Garlic Paste, Pepper, Fenugreek Leaves, Turmeric, Garam Masala, Cumin Powder, Coriander powder,Red Food Color and mix well. Coat this mixture to the marinated Chicken. Pour oil &#8211; 2 tbsp on top and mix it till each chicken is coated with the masala and oil. This can be cooked immediately. But allow this to marinate for an hr or more for a juicy flavorful taste.</p>

<p>Preheat Conventional oven to 375 F. Arrange the chicken in a broiler pan which has opens slits and tray to collect the juice at the bottom. This helps in collecting the juice released while cooking and helps keep the chicken dry. Keep it in the Oven for 25 &#8211; 35 min. Turn the chicken pieces in the middle to cook even.</p>

<p>Since the juice is collected in the below tray and chicken would look fry and juicy.  After the chicken is cooked,  either grill in a electric grill in medium settings or fry it in a dosa pan.  Spread sliced onion &#8211; 1/2 cup in the sides of the chicken in a dosa pan and spray some oil and lemon juice on top these.  If you like sprinkle some Chat Masala.  Fry this in a medium flame for about 5 &#8211; 10 min, turning the chicken regularly. This one required Pav Bhaji masala which is available in any Indian stores, without that you cannot get the restaurant taste. </p>

<p><strong>Masala Prep:</strong></p>

<p>	Pressure cook Carrot, Beans, Cauliflower, Potato for 3 whistles and mash it using potato masher. </li>
<li>

<p> In a pan add butter, Asafoetida, Onion and fry till onion turns golden brown. Add Ginger Garlic Paste. Fry till the raw smell leaves. Add Tomato and cook well till it becomes gravy. </li>

<p> Add Capsicum and Green Peas and fry 2 min. Add the mashed vegetable mix. Add the Pav Bhaji Masala and salt. Mix well and allow it to cook for 10 min. Add Coriander Leaves at the end. </li>

<p>	 Heat a dosa pan, place some butter and toast the sides of the bread. Remove it when it becomes light brown color on both the sides. </li>
